My pasta medley usually includes vegetables, pasta, beans, and sometimes meat. Nowadays, I don’t add meat because I want the medley to be vegetarian. Honestly, I think it taste better without it. The medley is super hearty because of the vegetables, beans, and pasta.
The meal is versatile so that you can add whatever vegetables, beans, and pasta you like. I usually include carrots, broccoli ,peas, corn, and beans. This is a great to make when you need to clean out the vegetable drawer. You could also add in bell peppers, yellow squash, spinach, or kale. I use kidney beans, which are red in color and I prefer canned beans to keep the recipe simple. You can use any kind of beans to replace red kidney beans.
As for the pasta, I chose Barilla whole wheat penne, but any small pasta will work well in this dish. If you want the meal to be vegan, don’t add parmesan cheese and if you need it to be gluten free, you can use gluten-free pasta, rice, or quinoa instead. I always make a big pot of this because it reheats well and we love eating the leftovers. I could eat it for lunch and dinner all week long and it is a great recipe to have on hand when you need it.
